Fresh Whole Orange Sea Stars

Whole five-armed sea stars, orange across the arms and fading to yellow at the tips, with a surface covered in small raised bumps. Two shots have the body opened up to show the dark green roe packed inside; another has pieces plated with a little herb oil and sliced chilli.

The arms are the part that gets eaten. Steam or blanch them briefly and the outer skin peels away, or split the arms and grill them. The body itself is not eaten.

Keep frozen at -18°C or below. Cook thoroughly before eating.
